Sourdough in a Bread Maker

Always remove the tin out of the bread maker before placing the main ingredients in it. If you wish to make it a Sourdough Rye loaf then replace 1 cup of flour with rye flour and you may need to add an extra tablespoon of warm water to the mixture. The dough must be placed in a warm spot to rise. A hot water bottle wrapped in a blanket with the loaf tin works well if there are no warm spots in the house.
  • Splash of oil
  • 340g or 1½ cups of warm water
  • 1½ tsp salt
  • 440g or 3 cups plain flour
  • ¼ tsp yeast
  • 1 tbsp poppy, sunflower or any chosen seeds for top of loaf if desired
  1. Remove the tin from the breadmaker and make sure the blade is securely in place
  2. Pour a splash of oil over the blade, this helps it pull away nicely from the loaf once baked
  3. Add all the other ingredients to the tin in the order above
  4. Place loaf tin in machine and set to' Knead' or any bread program
  5. After about 5 mins check inside to see if all has combined
  6. If needed, scrape down the sides with a spatula but do yourself a favour and stop the machine first
  7. The belt is easily stretched and the machine will need an expensive repair if you slow the blade whilst running
  8. As soon as all ingredients are incorporated turn off machine completely
  9. In total kneading of 10 minutes works well
  10. Leave loaf tin to rest in a warm place with some cling film over it or you can leave it in bread machine with the lid closed, if the area is warm enough
  11. Wait up to 8 hours until the dough has at least doubled, if really cold it may take even longer
  12. Remove cling film, if bread has dried out on top and you want to add seeds then flick a few drops of water on it and sprinkle seeds on top
  13. Put loaf tin very gently back into the machine and do not let the bread machine knead the mixture.
  14. Set to Bake which is quite likely to be the Cake program
  15. The loaf will be ready in an hour.
  16. Remove immediately from tin, remove blade from loaf and cool on a wire rack
  17. This bread slices much better once cooled but we sadly can never wait that long!
