Tahini sauce is wonderful for salads, sandwiches or on toast and is widely used as a dip in Southern Cyprus. It is worthwhile making a decent amount as it keeps for weeks in the fridge providing you use a clean spoon or knife each time that you remove some.
  • 3 cloves garlic
  • ¼ tsp salt
  • 1 cup tahini paste
  • ¼ cup lemon juice
  • ¾ cup or more of hot water
  1. Place the garlic with the salt in a blender, blitz till fine
  2. Add the tahini paste, lemon juice and water
  3. Blitz again for 20 seconds until well blended
  4. Test for taste, adding more lemon juice or salt as necessary
  5. The consistency should be runny but thick, similar to a pancake batter
