Ingredients
  • 1 onion
  • 2 Tbsp vegetable oil
  • 6 cups shredded cabbage
  • 2 tsp fennel seeds
  • ¾ - 1 cup cubed chicken salami, bacon or desired meat
  • ¼ tsp salt
  • Red and black pepper
  • ⅓ cup chicken stock or water
  • 1 sheet of yufka pastry
  • Vegetable oil for brushing
  • Your choice of sesame, poppy or black cumin / nigella seeds
Instructions
  1. Fry onion in the oil till soft
  2. Add salami or meat and stir for 2 minutes
  3. Add the cabbage and fennel seeds and stir round
  4. Add stock or water and cover with lid and let simmer gently until cabbage has totally collapsed
  5. Add salt and peppers to taste
  6. Remove from heat and let cool
  7. Turn on oven to 180C
  8. Lay out a sheet of yufka and brush with vegetable oil
  9. Lay the cool mixture along the closer half of the pastry, in one long line
  10. Gently roll up the dough so there is one long sausage
  11. Seal the pastry by brushing on a little water and pressing pastry to close along the seam
  12. Carefully slice into desired serving lengths with a very sharp knife
  13. Place on greased oven try or silicone mat
  14. Brush oil on the top of the boreks and scatter seeds of your choice
  15. Place in oven and remove when golden. About 20 mins.
