This is a very Aegean meze which I have just learnt from my lovely upstairs neighbour Esma who hails from Izmir, just down the coast a bit.

I am just back from Bodrum, that beautiful Aegean town in southwest Turkey where the weather is clement and the people are friendly and open-minded. It was a breath of fresh air to be there away from the depression of Istanbul after the elections and now the oppression of the anniversary of Gezi.
Foodwise, these Aegean meze are so tempting and varied in both taste and appearance, I swear you could choose any with your eyes closed and die happy.

This one is quite delicious. I made it at home the very next day after Esma Hanım made it and TT demolished practically the entire dish for supper! The garlic just makes it. My message re garlic is: don’t be scared of it, you will find that most people just love it…
1-1½ cups thick yogurt/süzme yoğurdu
- Place the grated courgettes with the flour, olive oil and water in a saucepan and gently cook until thickened. Season and add the crushed garlic.
- COOL. This is important before continuing with the next step.
- Add the yogurt with the chopped walnuts and gently mix everything together.
- Garnish with remaining whole walnuts and a swirl of olive oil. Add a little red pepper flakes along with some finely chopped dill.
